Denmark’s finest gastronomical invention is the unpronounceable and mouthwatering smørrebrød (open sandwich). A classic smørrebrød consists of a piece of rye bread hidden under different kinds of meat or fish and topped with a small mountain of pickles. Globalization has been harsh to the Danish national dish and its popularity has for a long periode been threatened by the pizza and the shawarma. However in recent years the smørrebrød has got a deserved renaissance and at lunch time (smørrebrød is a lunch thing) Copenhagen’s restaurants are again full of hungry guests - especially on Saturdays and during Christmas.

There are plenty of restaurant in Copenhagen serving smørrebrød and I have selected my favourites. Beware that the food served at the following restaurants is anything but kosher and it probably won’t appeal to vegetarians either.

Summers in Copenhagen are short and intense. After a long and dark winter the city gets alive and kicking during the summer when there is an abundance of festivals and events and on warm days Copenhagen’s streets, sidewalk cafés and city beaches are packed with people trying to get the most out of the sun and the bright Nordic nights before it is all over. The arrival of autumn is never popular, however there are several events in Copenhagen during September, October and November, which actually make me look forward to this dark and windy season.

Below I have selected my favourite autumn events in Copenhagen.

Beach life in Copenhagen!! To many this probably doesn’t sound too tempting if possible at all. However, the beach scene up here in the ‘far north’ is actually alive and vibrant (at least on those few days during the summer when the sun shines). Copenhagen’s local authorities have put a great effort into cleaning the city’s once polluted waters and today the Danish capital can boast about having a swimmable inner harbour with several places that offer the perfect combination of urban coolness and beach life laid-backness.

The Ginger Splash is our tribute to the world and all its colourful contrasts.

To us the delicate and refined flavour of the elderflower is the essence of the mild Nordic summers and the long light nights. The elderflower oozes love and fertility since Freja, the Love Goddess in the Norse mythology, is believed to have lived in the elder bush. Despite its mildness the elderflower should be treated with care and respect – the bush’s leaves, bark and green berries are poisonous and you are said to lose your mind if you sleep under it.

We all know that opposites attract and in ginger the elderflower has found its perfect companion. The ginger root is tropical, spicy and not at all pretty. Once matured the ginger is fiery and potent. Its fragrance and flavor is powerful and dominating but when the ginger meets the elderflower it softens and turns gentle.

To contrast the beautiful harmony of ginger and elder flower we’ve added a touch of licorice liqueur. The licorice gives the cocktail a dirty twist and we love how its sweet notes and dark colour contrasts the crystal clear gin and the fruity juices. Enjoy!

Raw, rainy and far from the ocean – Berlin is one of the least likely places for a beach bar. Never the less the German capital has several along the river Spree where artificial palm trees are set up and sand from the city's construction sites or the Baltic coast is brought in by truck.
